Greetings, recently I moved to a new apartment which has a fairly new range. For some reason my baked goods (muffins, frozen pizza!!, breads, cookies, etc) are not cooking properly. Things are browning too quickly on the bottom. This is especially bad with cookies. I have tried adjusting the oven rack up one level from the middle, different pans, and even reducing temperatures slighly but nothing seems to work from the standpoint that I can't replicate recipes that I made perfectly using my previous range. Has anyone else had an experience like this?

Will,

Some suggestions:

First get an oven thermometer (they are less than $10 at Target/Meijer and the like). Test your oven with the thermometer in it to see if it's running true to the temp you've selected on the dial. Assuming that it is, two questions:

Did you move from gas to electric or vice versa?

Does your new-fangled range by any chance have a Convection cycle?

Both ranges are electric. This one even says "True Temp" on the controls, and it doesn't have a convection cycle. I appreciate the feedback. It could very well be it is not running at the proper temperature. I will get a thermometer to test. A friend of mine also suggested lining the rack with aluminum foil so I may try that as well.

Will, lining the oven rack with aluminum foil will only make matters worse since it will prevent air circulation in the oven from equalizing temperatures.

How long will you along the oven temperature to stabilize? In a lot of ovens the temperature takes quite a while to stabilize and even after it first reaches temperature the bottom element is on quite a bit until the entire oven structure reaches a stable temperature. If the thermometer shows the temperature is correct try letting the temperature stay at set point for 15 minutes before baking.

Make sure the Top Element is working. In home ovens this will cause the symtom your speaking of. Turn on oven and turn lights out to see that the top element is glowing bright. Just my suggestion.

I agree with Rod. Check the top element. Also check to see that the stove is balanced front to back and side to side. Use a level...or a marble.

Also, check to see if the thermometer probe in the back wall of the oven is clean or gunky.
