I would guess that most sushi places would be reluctant to give lessons, simply because in Japan, sushi is an art form requiring years of apprenticeship, and it would go against the grain of this to suggest that Westerners could learn the basics in an afternoon.

If I were going to check out the possibility, though, I might call the folks at Maido. I'm just guessing that they might have a more open-minded approach, although I have no idea if they would consider giving classes.

It has been some years ago, but I took a hands on sushi class from Lelia Gentile of Stan's Fish Sandwich and the late St Matthews Seafood at the Cookbook Cottage (that tells you how long ago it was!!!). I know she has done some other classes at Campbells, etc. more recently. It might be worth a call to her (896-6600) to ask if there are any more planned or if she would consider doing one. It was a great class and I think that sushi is something you definitely need to do "hands on".

Lelia does GREAT classes. I think she's one of the best instructors we had for actual teaching.

I always wanted to learn how to make good sushi and I found this place in L.A. I talk to some of the students there and they are really happy with what they learned.

I have taken the sushi class with Leila at Campbells and it was excellent as was the sushi
