Pho Phi coming to Shelbyville Road Plaza

Business First reports that a Vietnamese restaurant called Pho Phi will open at Shelbyville Road Plaza, taking over the space where Home Run Burgers operated:

Hagan Properties has a Vietnamese noodles and pho restaurant called Pho Phi lined up for the space, but the opening date wasn't immediately clear.
Pho Phi has one other location in Austin, Texas. The owner, Todd Nguyen, declined to discuss details of the Louisville location, saying it's too early in the process.
The Pho Phi website for Austin shows that the restaurant focuses on spicy beef and pork noodle soup as well as grilled dishes and favorites such as Vietnamese egg rolls in a casual atmosphere.

Sounds like a great addition to the plaza, although I can't help but chuckle at how much the name sounds like a college fraternity. :lol:

I read it backwards and was thinking more Jack and the Beanstalk. Fi Phi Pho Fum.

If it turns out not-so-great, we'll all be saying "Feh"

If we really love it, we'll take some home, wrapped in "Ph"oil!

Pho Phi has a sign up saying it will open Saturday (April 20). I haven't been able to find a website or Facebook page, although the original Texas location has a website ( http://phophirestaurant.com ). I'm hoping the Louisville menu is the same as the Texas one.
