Bar Vetti opens Monday with no-tipping policy

Chefs Ryan Rogers and Andrew McCabe will open bar Vetti, a “laid-back Italian spot,” in the 800 Tower this Monday, Oct.16.

Bar Vetti will offer fresh pasta dishes and a seasonally changing selection of brick oven pizzas, snacks and shared plates. In an innovation, bar Vetti will include the price of service in all food and beverage items; the restaurant will not accept tips, choosing instead, in the words of a 5,400-word news release, “to pay all of its employees a competitive, professional wage.”

The menu is designed for sharing, opening with “snacks” including a classic frito misto with Calabrian chili aioli. “Plates” includes salads, seasonal vegetable dishes and entrees such as chicken saltimbocca with country ham, a butternut squash, and sage bread salad, brown butter and lemon and roasted cauliflower with seaweed tonnato, white grapes, golden raisins, lemon, fresh herbs and bread crumbs. The “Pasta” section offers fresh pasta made entirely in-house including rye gemelli with kale pesto, walnut, charred sweet potato and parmesan. The rigatoni cacio e pepe, a traditional Roman dish of pasta, black pepper and pecorino cheese, incorporates whey from the housemade ricotta cheese to give the sauce acidity and balance. There will be a rotating selection of pizzas such as country ham with mascarpone, red onion, fig mostarda, arugula and balsamic and sausage with Jake’s spicy country sausage, tomato, broccoli rabe and Parmesan. Desserts round out the menu and include tiramisu gelato “affogato” layered with house-made mascarpone gelato and ladyfingers and topped with cold-brew coffee.

Minneapolis-based Shea Design created an open, light-filled space intended to create the image of a bustling Italian bar or café. The intimate 1,800 square foot restaurant, with an open kitchen, seats 45.

Bar Vetti will be open for dinner from 5-10:00 p.m. Monday-Thursday and 5-11 p.m. Friday and Saturday. Reservations are recommended and can be made at http://barVetti.com. Breakfast and lunch service will be added later.
