What I remember most about Chi chi's is they were kinda the front runner of what we called Florida Room Dining. Bright airy spaces with lots of lights and live plants. As opposed to the "dark cornered" restaurants like Vic Station (where I worked fork years.)

Was a server at Chi Chi's for 2 years while attending UK.


...btw, the fried ice cream, while good, came in boxes frozen, and was actually prepared by the servers (as were the Sopapillas)

Adrian, you made the fried ice cream and I just ate it, but as I remember...

take the scoop of ice cream and roll in the crushed corn flakes to coat; drop it in the deep fryer for a second; then drizzle on lots of honey and sugar/cinnamon?

What else went into the creation?

I worked there in 87 as a line cook while drinking at UK. I also worked at the Shelbyville Rd location briefly in 92. In retrospect, it was a fun job.

Sometime in between, they went from making the guacamole in-house to making it in the commissary. Perhaps that was when things started going down hill.

I don't care if it was imitation crab meat, the seafood enchiladas rocked!
