I am looking for some good chorizo for a recipe. Does anyone know of a place where I can just buy a pound or two ground up, or uncooked in casings that I can take apart?

ValuMarket in Mid City Mall always has chorizo - you may have to remove casings, though.

Lotsa Pasta has it, I believe ... and certainly all the Latino markets on Preston, in the South End and Clarksville.

It sounds like you are seeking Mexican Chorizo or Chorizo Fresco as opposed to the Spanish Chorizo. It's always available at ValuMarket, but I've seen it at Kroger too.

As noted above, Lotsa Pasta often has Mexican chorizo as well.

Probably the best bet, though, is one of the Latino markets. Here's the list from the Fall2007 edition of Food & Dining:

If your dining at Los Aztecas they sell the ground chorizo by the pound. Not sure if they all do, but the one in Prospect does.

Got to Mike Bests on Brownsboro. They have lots of homemade sausage including 2 or 3 heat levels of chorizo. Beware of the 5-alarm. You should try the german brat and the cheddar brats.

You can also try Kingsley's on Taylorsville Rd...they usually have a good selection.

The Woodlawn Park Kroger has chorizo in the packaged meat section.
