What: Chef Shawn Ward, executive chef of Ward 426 and veteran olive oil expert and distributor Bill Sanders are teaming up to show patrons how to taste and use olive oil. Sanders, owner of
First Fresh olive oil, has joined Ward for a pairing at his restaurant. The evening will feature a 5course
olive oil based meal.

Appetizer: Roasted asparagus over browned rice noodles, french country olives,
aged balsamic and shaved parmesan reggiano.
Salad: Sweet potato salad with citrus confit, limoncello vinaigrette.
Fish course: Halibut wrapped in prosciutto style ham, with fork smashed potatoes,
olive oil and spring onions, shallots, wild mushrooms and a banyuls vinaigrette.
Meat course: Olive oil poached veal with olive oil poached lobster, sauce choron,
braised leeks, and creamy polenta
dessert: pistachio olive oil cake, vanilla buttercream, orange coulis, cardamom ice
cream
