What I hear the restaurant industry saying in this fascinating article from Nation's Restaurant News: We can't get quality employees. Also, we won't pay for quality employees.

Seems like quality line cooks are extremely hard to come by, regardless of pay rate.

Additionally, since 1999, real median household income in the United States has been trending down while food inflation has been averaging 2%.
