Interesting article although the information was collected back in 2012/2013. It would be interested to see if any of the demographics have changed since then. Most of the factors they cited are pretty much common sense with a couple of exceptions. One that I think would be interesting to see is if going to the same location on a regular schedule increase business because of predictability of where they would be. In this study they showed that changing places from day-to-day improved sales but they didn't compare the same location from week to week. I guess it boils down to whether purchasing food trucks are more spur of the moment or planned events.
