I'm not looking for the re-hydrated and baked deli-style country ham. I'm hoping to find a place that sells really thin slices of a dry ham. Like how Garage Bar does it. Basically Kentucky prosciutto. I have found whole dry-aged hams at Valu Market, but I don't need a whole ham. I just want some for snacking with cheese and crackers. Thanks for any help!
While I totally adore and respect Dan, and Butcher's Best is the only butcher shop that I am aware of in East Lousiville, when I need or want country ham I go to Finchville Farms Country Ham in Finchville, KY. It is as heavily smoked/salted at Newcomb's. For me, personally, I think Father's is a bit heavy on the salt.

Isaac, Welcome to the Forum! I'm with Dan on Morris' Deli ( Sign says Karem) and their Fathers. I used to drive cross town every year to get it for my country ham biscuits and spread, but I moved- now I can walk there .
