CJ loves Ville Taqueria ... but all the rest is "Tex-Mex"?

It's good to see The Ville Taqueria​ get 3 1/2 CJ stars. But ... all the rest is "Tex-Mex"? I wonder what our good Mexican-American restaurateurs like Israel Landin, Saúl Garcia and all the taqueria operators in town think of that? I'm not sure that what The CJ thinks that word means is really what that word means ...

Looking back, I spoke of the heritage of local Latino eateries in my November 2014 review of The Ville Taqueria. I'd like to think it was more nuanced, though, and I only mentioned Tex-Mex in connection with Tumbleweed.
