In honor of National Kouign Amann Day, Blue Dog Bakery and Café will create seven flavors of the iconic Breton pastry on Saturday, June 20. These kouign amanns will be available for purchase at Blue Dog while quantities last.
Kouign amann (pronounced "queen a-mahn") is a round crusty cake, made with a yeast-raised
dough containing layer upon layer of butter and sugar. Similar to puff pastry or croissants but with fewer layers, the resulting cake bakes slowly until the dough puffs up and the sugar caramelizes. The name comes from the Breton words for cake (“kouign”) and butter (“amann”). Kouign amann is a popular and traditional pastry in Brittany, where it originated in 1860 when flour was scarce but butter was abundant.
Blue Dog offers freshly baked traditional kouign amann every Friday and Saturday. For this
special event, their classic recipe will be available, along with cinnamon sugar, strawberry
rhubarb, pistachio mascarpone, dark chocolate ganache, vanilla apricot, and the BLT.
"The kouign amann represents the pinnacle of our recent exploration into Viennoiserie, " says
Blue Dog's head pastry chef, Andy Wolf. "This event will be a celebration of our expanding
knowledge of laminated doughs."
