Gethsemani Farms Cheese

I got the Gethsemani Farms Spring catalog today, and cracked it open to read that they are no longer going to be making and selling their cheeses. What???! I emailed their customer service and got a this reply "We are so sad to be losing the cheese. It is so labor intensive and the number of monks is dwindling." They are selling the last of it on their website https://www.gethsemanifarms.org/cheese.aspx. I am ferklempt. And no, the fruitcake and fudge are not being discontinued.
