What's Cookin on a Snow Day

I'm making Boston Baked beans with a beef roast on top in our old cast iron dutch oven, started at 8 and it shoul be ready to go around 5pm.

Sounds great! I'm making Bosnian pita bread in a few minutes. After the bread is done, I think I'll make zucchini and scrambled eggs to go with it. For dinner we're having taco night. :)

Fun question. Mary made stuffed peppers so we could have a complete meal for lunch. Tonight we'll just gorge on tons and tons of hot fresh bread and butter, when the baguettes I've got on slow rise come out of the oven.

Lunch after shoveling was chili from my freezer, with red wine.
( We are all out of beer, milk and sandwich bread- but have enough food in our freezers and pantry's to last a month. Seriously. :) )

Dinner is scratch chicken pot pie with biscuits in front of a roaring fire. :D

Feel like I cooked all day Monday. Full-blown breakfast (bacon, eggs, grits & biscuits). Leftover chili for lunch with "gourmet" grilled cheese (cheddar, swiss, mozzarella & parmesean cheeses). Chicken & dumplings from bone broth that I canned and chicken that I canned. Also did two batches to canned beans (black and mayacoba); these were rehydrated, packed and processed in the pressure canner.

BTW, anyone here with experience with the mayacoba bean? I haven't tried them yet but was intrigued so I grabbed a bag.

In the last few months, I've canned navy beans, garbanzo beans, BBQ beans, pinto beans and, of course, green beans from the summer garden. Next on the list are cranberry beans and lima beans. In addition to all the chicken, turkey and pork and various kinds of bone broths I've canned this winter, we're in for some really good eats around here, snow or no snow.

Excellent lasagna. Of course all I did was eat. The lovely lady (Charlene) did all the cooking.

Now she and her sister are at Fleetwood Mac at the Yum Center. Thank goodness they only had two tickets and left me home.

I made a simple stew with tons of veggies. Parceled it all into freezer containers then realized I had no room in the freezer. Well, it was 8 degrees outside so I placed the containers in a shallow box and set them on my deck. Checked to make sure they were freezing properly and found a couple of tiny wrens huddled in the box with the hot containers. Aww...

Tonight, we're having Cubed Steaks, with Green Onions, smothered in Worcestershire sauce with smashed potatoes as a side. It may not be gourmet, but I remember my dad making it when I was a kid and I want some.

The plan was to have carnitas tacos but the electric went out right as we were getting ready to eat. So what does my Eagle Scout of a husband do?....lol
Dinner was delish!!! (and the electric came back on after an hr)
