10 Tables Dinner

by Mark R. » Fri Dec 12, 2014 12:48 pm

"Chefs Dustin Staggers (Roux) and Griffin Paulin (Rumplings) are teaming up with Chef Eric Morris (Loop 22) to bring Louisville something new and exciting: a “secretive dining club concept” called 10 Tables."

So in his own words Staggers is selling "shit." Here we go again with this.

Otherwise the concept sounds like it could be fun, but not so secretive if you go talking on the internet about it!

I think it would be a gas but I'm not sure it's gonna fly. Food and eating is such an intimate thing and diners can be , well, extremely picky or persnickety about what they eat. To charge those prices and say the menu will be based on whatever the chef's whim of the evening happens to be....I don't know. How many people would be willing to say "Here's $100. Just feed me." I know here in this forum, there are many adventuresome diners but are there enough to support this kind of venture? Or maybe it would just be a once a month thing in which case the numbers might be there. I don't know. I'd be willing to try it.

We have over 600 requests for reservations in over 36 hours. There is certainly some interest. I know Eric Morris, Griffin and I are super excited to be able to source quality, beautiful ingredients and provide them to our diners.

As someone who often has a hard time deciding what to eat, I'd often pay the chef extra to just pick for me. I've discovered some of my favorite dishes on "blind" prix fixe menus in Atlanta and Austin, and they are things I either thought I hated or never would have eaten! :D
