The organization is particularly salient when you have a staff of lazy knuckleheads for whom "right here" is where something goes.

And I think you can expand that narrow "vegan SI" section to include all outrageous SI. (like Steak 86 Steak) If you want to leave jalapeños off your nachos, no problem, but if you want your potato skins dipped in buffalo wing sauce and then patted dry before being filled with bacon and cheese, chances are good someone is going to be annoyed.
