Jeff, Sheltowee Farm in Bath County provides a lot of wild mushrooms to restaurants in Louisville, Lexington and Northern Kentucky. Good quality stuff. I think Billy Webb is the guy ... try contacting them through Kentucky Agriculture,

Getting fresh exotics out of season can be a challenge, but it usually isn't a problem. Being that Louisville is a hub city, we can have just about anything flown in fresh. You may pay a premium on some mushroom types, but not as much as say 10-15 years ago.
