Louisville Cardinals Football Kickoff Luncheon.

All the local outlets wrote of this and all the implications pertaining to the upcoming season. I enjoyed the meal preceding the event. Here is my review.

All in attendance at the 2014 University of Louisville Football Kickoff Luncheon were treated to a 3 course meal preceding the presentation.


The 1st course was a very nice Iceberg lettuce wedge topped with a Green Goddess type dressing that included fresh dill. The dressing paired well with the lettuce and the other veggie accoutrements of julienned carrot, radish slices and a few halved baby tomatoes.
We were offered a bread basket and I chose a ciabatta style roll with softened butter. This was as nice counterpoint to the salad. I do wish the bread were served at a warmer temperature but it was acceptable for the luncheon setting.
So, now to the 2nd course. It's been mostly the same for the past few years. For those of you who attend on an annual basis, such as myself, you can relate. They always offer a huge chuck of beef, in this instance a filet mignon. My portion was somewhere in the 8-10 ounce area, topped with a smattering of onion gravy and plated with a variety of grilled veggies. I prefer my beef to be medium rare and this particular slab was cooked to a medium well doneness. A nice thing about a filet is that even overdone it's still very tender; just that some flavor and juiciness is absent.
Though the beef was the star of the meal, the veggies didn't disappoint. Grilled potatoes, onions, tri-colored bell peppers and asparagus spears, all expertly prepared to a pleasing Al dente texture. They were a fantastic foil to the sumptuous beef. Very well executed. Except for the doneness of the bovine meat, the entree was well executed.
Of course, a dessert is always presented. In this case a superb triple chocolate cake. I am almost at a loss of words to describe this dessert. I am a true chocolate lover and the 3 types used hit every point my palate desires. 2 layers of dense extra chocolate cake were filled with a rich and creamy chocolate filling. The outside of the cake was coated with a thin layer of cake, quite a nice culinary feat. The cakes outer rim was frosted with an ornate icing application and the center of the top had a nicely shaped chocolate ganache finishing off this great sweet ending to our meal.
Great food along with great company is truly one of lifes best treasures.
