I am going to New York for a few days and have been doing some research on different restaurant concepts. Found this on Zagat and thought it was really cool.

Under this beautiful beer hall there are kiosks set up for food trucks to sell their food on site. I know that Roger got out of the restaurant business but thought this might be a way of sharing a space and then let everyone do what they do best.
