Is there some other way to cook collards than with a big hunk of jowl meat?

Those are very good things, and if you were to add a dash or three of Spanish smoked paprika, I'll bet you could give Ron a serving and he wouldn't even miss the guanciale.

Great idea and great price!

I'll be out of town but I just passed this along to my boss. I'll be sure and let other folks know too.

Hi

We do put Ham Hocks in are Greens sorry but there will be vegetarian food there.

Here is what is planned as of now

Mash Potatoes* and gravy
Cornbread Stuffing* and Brown Gravy
Green Beans, Collard Greens
Lima Beans* and Sweet Corn*
Mac Cheese* and croissants*
Country Ham
Blackened Mahi Mahi
Cajun Roasted Chicken
Meatloaf and Fried Chicken
Peach Cobbler*and a full desert Bar*
A full Salad Bar*

and More.

I put an * towards everything that is vegetarian. I do use chicken and beef stock in the gravy. Some things might change a little and some other stuff will probable be added.
