Dan, are you going to be involved full-time with this new restaurant or are you just helping out for the pop-up?

No, I'm not going back into the kitchen full time. Although I sort of miss it occasionally,  I really like what I do now. This just seems like a fun way to get back into the mix once in awhile. I've known Chef Tavis for years, but we've never had the opportunity to work together outside of charity events.
Hopefully, this will be the successful start of other pop-up ideas we have for the NABC Bank St. Brewhouse.
This just seemed like a great idea to get things off the ground. :D

We're excited about it, and I see it as indicative of what we'd like to be doing with the kitchen every now and then. The kitchen is still intact and licensed, so there are many possibilities. Hats off to Dan for taking the lead.

Happy that Chef Dan likes what he does now AND gets back to the kitchen occasionally for the rest of us! Think I'm going to make this event for the Tots  and some NABC beer or Louvino wine. I'd like to get some Tot tips.

We have finalized the menu! Some of these will be on the Louvino menu and others are chef whims we think will go better with beer than wine:

Chef Tavis's Housemade Loaded Tots with Ranch $8.00

Ground Chuck Slider on Brioche Bun with Port Cheese Schmear, Bacon and Caramelized Sweet Peppers & Onions $4.00-Three for $11.00

Duck Fat Fries with choice of Dipping Sauce-Truffle Aioli, Ranch or Sriracha Ketchup $6.00 extra sauce .50 each

Hot Brown Mac & Cheese topped with Chef Tavis's Smoked Gouda Mornay $8.00

Confit Chicken Wings with Asian Chili BBQ $8.00

NABC Beer Steamed Mussels with Crostini $8.00

Mini Bangers with Yukon Gold Mashed $8.00

Apple Potstickers with Bourbon Caramel $5.00

Chocolate Malt $5.00

Just got home from what is one of the best early evening meals ever. Pop-Up @louvinowine held @nabcofficial on Bank St. in NAIN.

They are serving till 11 pm or the food runs out. GREAT craft beer & Awesome food from what will be 1 of Louisville’s best restaurants @louvinowine go, NOW.

The SSU - @EMSquirrel & I were one of the 1st guests. We will NEVER have frozen tater tots again after having Tavis’s Loaded Tots. Just Outstanding.

@EMSquirrel ordered the Ground Chuck Sliders - Port Cheese Schmear, Bacon & Caramelized Sweet Peppers & Onions on Brioche Bun. My smidgen sample was great!

Tavis, how do you cook those sliders so they are pink in the middle? & the Port Cheese was so smooth, no bite, yet plenty of flavor. Favorite @louvinowine for sure.

I had NABC Beer Steamed Mussels with Crostini. These jewels SURPASSED those served at the old Hasenours. No exaggeration. Tavis does the job for @louvinowine.

Great food and beer, and the Louvino reps were very friendly. We're looking forward to the opening in the former La Bodega Tapas Bar on Bardstown Road - reportedly in late July. I got to say hello to Chef Dan who was happily working both the back and front of the house.

It was very nice to meet you Jay! Always a pleasure to put another face to a name!

It was a very successful evening for everyone! Tavis got great feed back on the dishes he was trying out; and for myself, I was very happy that we had so many people turn out for the event.

Looking forward to the next pop up! Stay tuned for the date. Nashville Hot Chicken is my theme for the next one!
