As someone who makes cheese for a living I promise you the FDA is definitely not a fan of small business, or food for that matter.

Gee, I wish they were HALF as serious about the food products that we get in from overseas (China) often unmarked as so, that have killed thousands of U.S. Pets and sickened babies. Someone in the FDA's family must sell plastic or aluminum shelving.

I can only conclude that the FDA (and by extension your local Health Department) hates food. They wish it were all made of stainless steel. I understand, respect, and appreciate the need for safe food handling, but some of the things they expect are nearly impossible, and unrealistic at best, when handling food. I have had discussions with USDA, FDA and HD officials that border on the absurd.

I think the government would prefer if all food were processed by stainless steel robots covered in FRP board in air tight, isolated facilities in the vacuum of space.

Another fine example of how our government is here to help us! :lol: Unless they understand how food is made they certainly can't regulate it properly and this certainly demonstrates the fact that they have no idea how cheese is made. In South Carolina, Clemson University ages their Blue Cheese in an old Civil War railroad tunnel, I'm sure they would have a fit if they discover that! Oh well, in most cases European cheese is better anyway and the FDA can't say anything about how they make it. :mrgreen:

I agree to an extent, old world cheese is fabulous and the guilds and artisans over in Europe insure it's success. But isn't it a shame that it will always be so since we are being legislated into a position of inferiority with laws like this? Instead deference to associations of artisan makers our legislators defer to bean counters, revenue collectors, and stake holders in large quasi-agricultural corporations.

One size fits all, and zero tolerance policies are always dangerous.

The rule applies to imported cheese too.

So that cant say anything about how they make it, but can prevent it from getting to us.
