Certainly was an interesting article and it highlighted a lot of cultural and ethnic problems that affect food preparation in service. I'm sure some of them become problems in Louisville but on a much smaller scale and a lot of them even don't service here. I found the short paragraph about Sous Vide cooking interesting, I wish they had gone into that subject more.
