He's currently working at Rye.

Hands down my top pick, no question.

This is a list off the top of my head and by no means complete.I'm not absolutely sure if these guys are all under 30 but they are all young and talented:
Tavis Rockwell at Equus/Jacks is not quite 30 yet.
Reed Johnson at Wiltshire Pantry just turned 30 in September I think.
Michael Dunbar of Corbett's
Serge Katz at Vincenzo's is very solid.
Ming Hsuan Pu formally of Asiatique recently took over River City Winery in New Albany is one of our best young guns!
Brad Menear from Marketplace @ Theater Square
Jordan Delewis at Against the Grain

Then there is that whole big bunch of us of what I consider the "Second Generation" of local chefs who are in their late 30's-early 40's who either came up under the likes of Chefs Dean, Looi, Anoosh, Bim, Augustino, Richard Lewis, Jim Gerhardt, Joe Castro, etc...or moved here young but started somewhere else.
For example, these would include some guys like Anthony Lamas, Shawn Ward, Allan Rosenberg, Josh Moore, Tuan Phan, Dallas McGarity, John Varanese, Steve Rappa, Harold Baker, etc.; and others like myself Chris Howerton, Eric Ruffra and Jay Denham who are no longer in the kichen per say but, are still active in "The Bizz"

The fellas at Milkwood are under 30 I believe. Kevin Ashworth and Phil Cronin are young and good at what they do!

Off the top of my head and I'm sure a couple of these people are over 30 and I'm leaving off someone important:

Andrew McCabe - Rye
Mark Ford - St. Charles Exchange
Paul Pskulas - Holy Grale
Ming Hsaun Pu - River City Winery
Jesse Huot - Grind Burger Truck
James Moran - Seviche
Tyler Powell - The Silver Dollar

I think Nick Sullivan who is now Exec Chef at 610 would be a candidate too.
BTW- Tavis is definitely under 30

I think that Andrew McCabe is hands down the top dog in Louisville. Ryan Rogers has gained the area national attention through his restaurant.

Thanks, all! This has been very helpful, both in reinforcing some of my own ideas and giving me additional information to work with.
