Joseph Drouhin Wine Dinner Dec. 10 at Varanese

Varanese Restaurant will partner with Maison Joseph Drouhin of Beaune, France, for a "Trip Through Burgundy" wine dinner on Tuesday, Dec. 10, at 7 p.m. Richard Wethington will discuss the wines during the six-course dinner paired with Joseph Drouhin wines. Dinner is $65 per person, plus tax and tip. Reservations are required and can be made by calling 899-9904 or emailing letsdine@varanese.com.

First Course
Laforêt Chardonnay
Chicken Terrine with Creamy Almond Puree and Micro Herbs

Second Course
Chablis Vandon Premier Cru
Grilled Oysters with Lardo and Shallot Mignonette
Served with Pancetta Salad

Third Course
Puligny-Montrachet
Pork Belly Cassoulet with Roasted Fennel and Butternut Squash
Served Fleur de Sel with Herbes de Provence

Fourth Course
Côte de Beaune Villages
Smoked Trumpet & Hon-Shimeji Mushrooms with Caramelized Pearl Onions
Finished with a Red Wine Veal Glace or Duck Glace

Fifth Course
Côte de Nuits Villages
Slow Braised Beef Brisket with Baby Turnips, Carrots and Potatoes
Finished with a Natural Pan Sauce

Sixth Course
Beaujolais-Villages
Fig Jam, Drunken Goat and Iberico Cheese with Chevre Goat Cheese Ice Cream
Served with Crack Pepper Cracker

From all accounts, and previous experience, this dinner should prove to be incredible. Making the reservations for it today myself!
