If you are only prepping one Pastrami, you may try contacting Paul Pfister at Nuts & Stuff to see is can get you the small amount you need.
I am currently out, but am planning on purchasing a couple of pounds toward the end of October to do all of my holiday charcuterie; if you can wait that long, I gladly share some of mine.
If you are prepping the Pastrami for yourself, family and/or friends, you don't really need Pink Salt. Any curing salt will do; you just won't get pinkish finished product people associate with Corned Beef & Pastrami. There will be no impact on the flavor.

Except they are no longer accessible to the public!
