pink salt for curing meat

by Jon K » Tue Oct 08, 2013 10:00 am

Thanks Robin for giving the go ahead for this somewhat off topic post. I need to buy pink salt (Prague powder #1). This is for personal use to make Pastrami at home, so I don't need a lot. Could forumites steer me to local sources?

I usually buy my Prague Powder #1 from Amazon; one pound will run you about $15.00. Meijer carries pink salt, but I don't recall seeing Prague #1. If you are only prepping one Pastrami, you may try contacting Paul Pfister at Nuts & Stuff to see is can get you the small amount you need.
I am currently out, but am planning on purchasing a couple of pounds toward the end of October to do all of my holiday charcuterie; if you can wait that long, I gladly share some of mine.
If you are prepping the Pastrami for yourself, family and/or friends, you don't really need Pink Salt. Any curing salt will do; you just won't get pinkish finished product people associate with Corned Beef & Pastrami. There will be no impact on the flavor.

Bass Pro carries it. It's available in small packages if you don"t need too much.

Thanks Patrick for offering to share. I think I'm going to use the nitrite containing stuff to produce that "authentic" pastrami color.
Thanks to everyone for their help.

Yeah, I am not a fan of this either. I am still upset they moved across town. I LOVED having them one block from my kitchen.

Cabela's carries a metric ton of meat curing products...not sure about pink salt...but if it's near your house, give 'em a try. It's also a good place for guns and ammo,

Thanks, Steve! I could practically walk there, but would never have thought of them for meat curing. :D

Oh yeah, they (we) carry a veritable Pantheon of hoof to freezer products. :D ...all kinds of food processing stuff...meat curing products/blends, home -and- commercial grade dehydrators, food grinders/slicers, smokers, etc, etc. While you're there check out our new line of OutfitHER products. I'm getting my wife a new Bear compound bow in pink camo for our anniversary (shhhh - it's a surprise). I'm usually in the fly-fishing dept, stop by and say "happy-happy-happy".

Here's a link to our amazing selection of food processing products.
