Beet ice cream at Comfy Cow benefits Food Literacy Project

“Just Beet It,” the delicious Field Day Farm beet ice cream with rosemary orange-marmalade swirl that Comfy Cow chef Erica Parker created for last week’s Field To Fork Dinner for Food Literacy Project, will remain on sale through October at Comfy Cow’s Clifton location, 2221 Frankfort Ave.

Comfy Cow will donate 20 percent of the proceeds from these sales to Food Literacy Project to support the non-profit’s Youth Community Agriculture Program (YCAP) and other programs for local teen-agers at Oxmoor Farm.

We had it at the Field to Fork dinner and it was really good. Not at all "beety," and the marmalade, a subtle component, put it over the top. 8)

This was my favorite course at the Field to Fork dinner. I've always been a fan of beet desserts, but the swirl in this escalates it to the divine!
