Source for Udon noodles and Wakame

by Nimbus Couzin » Sat Aug 24, 2013 7:18 pm

Hi,

Can anyone point me in the right direction for udon noodles, and wakame (suitable for miso soup base). I'm thinking the shop across from Iroquois manor, but haven't gotten over there before closing time recently.

I'm surprised the udon noodles aren't easier to find. Basically, I got sick of paying two bucks plus for a bowl of instant miso you can find in most local supermarkets. Bulk miso is dirt cheap (maybe ten cents/bowl or so). I have that now, but wakame would make it better. As a vegetarian, I'm passing on the bonito flakes that one often finds in miso. Fresh chopped tofu is a nice ingredient also.

Thanks!

Try the Valu Market in Iroquois Manor or Viet Hoa on Preston Hwy just south of Fern Valley Rd. Both are open late.

Choi's in Lyndon might have them, too, if that direction is more convenient for you. And Rainbow Blossom has a fair collection of Japanese ingredients including a variety of noodles.

Another option would be Whole Foods or Rainbow Blossom, possibly trader joes.

We've purchased a variety of dried seaweed products from Asian supermarkets and often the instructions are absent or covered over with the english language ingredients label necessary for import. Check google if you're stumped.

Check any sell by dates if you're in a funky supermarket. Not really an issue with dried products in the immediate sense; other things more so.

Read the labels too. Buckwheat soba noodles are rarely 100% buckwheat for example. Doesn't make them bad, just different -- or an allergy concern.

There are online stores, incl Amazon, which sell things like wakame.

All,

Are you talking about fresh Udon noodles, or dried? Love me some fresh Udon and haven't seen any around since Costco stopped carrying them. I'd love to have a new source.

Nimbus-

Where are you getting your miso? Is it dried or fresh? I have bunches of recipes that call for it, but never seem to be able to find "miso"- rather than miso soup- in the stores ( but I haven't looked that hard). I keep thinking I'm looking in the wrong section or something....

Thanks,
Deb

Rainbow Blossom St. Matthews has it in a variety of types (light, dark, red, organic) at the right-hand end of the cooler along the back wall. I'm sure Whole Foods does, too, but of course the Blossom is local.

I have bought Udon at World Market and Dixie Oriental Food Market. (Don't be fooled by the "Dixie." It's on Bardstown Road in Buechel.)

thanks for the replies ya'll...

I got my miso from Value-Market at Iroquois Manor. One kg bag, so quite a bit. I can't remember the price. Japanese. I think they just had two choices, red or yellow.

Deb, the miso at Whole Foods is in the endcap cooler that faces the yogurt portion of the dairy case....the same cooler where the tofu and tempeh and fresh (not frozen) veg meaty things are.
