Is it true that live seafood is used for sushi in other markets. Talked to the chef from Kansai in Clarksville and he said we are 10 years behind on sushi trend

A few months ago I saw a piece on the travel channel (Zimmerman's show-can't recall the name) showing a lobster being hacked and eaten within about thirty seconds. Even he was a bit nonplussed.
Of course I've eaten many a freshly opened oyster and clam so I guess it is pretty much the same thing.

I had this exact dish at Jewel Bako in NYC a few years ago. delicious.

The 'Pearl Oyster Bar & Steakhouse' in NYC is doing similar things also. Pretty cool IMO.

Seriously, your gonna bring up animal rights on a food forum? There are very few people in this world that would eat a dead univalve, bivalve or mollusk cooked; let alone raw. And if sushi/sashimi IS NOT the freshest and of the utmost quality, then it is crap. One of the reasons of doing 'table side service' in this fashion is to 'show the customer' the freshness and high quality. Not some morbit fascination about eating live animals 'kicking and screaming' that animal rights activists make it out to be.

No Ron, I fudged up. Your correct, its just 'Pearl Oyster Bar'. The wife works @ Z's and I'm just use to seeing '& Steak House' after I see the words 'Oyster bar'.

oh ok, I was hopeful they had opened a second location. Pearl has the best lobster rolls in NYC, and the steamers are pretty damn good too.

All we need are a few black angus cows and a free roaming chicken or two and we can call it a party. Unless, of course, the cow or chicken commits hara-kiri. Then, they would have the last laugh :D :D :D
