Wow! That was disgusting. So what do you think is going on? Why would a restaurant do that? Why not just leave it in the walk in?

I am wondering, was the food put outside because it was over temperature or too old and therefore would not have passed the inspection, or was it outside while they cleaned the cooler for the inspection. Not that the reason matters, it is disgusting that it was outside for any reason!. With his name he should be able to get a job at Hubers! Never been to Golden Coral and now I certainly won't be going!

My question would be are they actually going to use in food now or was put there to be put in the dumpster at a later time? If the latter, it's still not good practice but a lot more acceptable than the alternatives!

I obviously listened to the video before commenting! This employee also obviously has a grudge. Just because he said that's what the manager was planning doesn't mean that was what was going to happen! If it was he would've tried to document it somehow.

Looked to me like the food was left on sheet pans. We're they throwing them away as well? No, I think it was pretty clear they were planning on using the food. Else it would all have been in the dumpster. I don't think he had a grudge as much as he was frustrated with the totally unsafe food practices and couldn't get anyone else to care or address the problem. He was , after all, still employed there.

It could have just as easily been food that was unfit for public consumption that was still in the restaurant. The manager rapidly put it in this location including trays and pans just to get it out prior to the inspection. What reason would he really have to put it here instead of leaving it inside in the coolers? If it was their inspector probably wouldn't have freeze any questions about it assuming it was food destined for consumption. If he found it here he was certainly going to raise some major questions. Maybe I'm giving the manager too much credit but it just doesn't make sense any other way. In addition we don't even know for sure that an inspection was going on inside the restaurant. The manager could have just told this employee to dispose of that food and he decided to make this video??

Please explain what facts or behavior by the employee led you to the conclusion he obviously had a grudge? Maybe he was simply concerned, as he claims, for the safety of the customers and the public?

The manager was immediately fired by the franchise owner. Does that answer your question for you?

I'm seeing reports that the employee's father demanded $5,000 not to release the video.

That being said, I once worked in a restaurant where the manager put questionable product in an empty French fry box and put it underneath full boxes in the freezer in advance of a visit by company bigwigs. I don't know if the Golden Corral manager was planning to bring the product back in once the inspection was over but the premise rings true.

How was the manager so sure that the inspector wouldn't go into that alleyway to make sure the lids were on the dumpsters? Apparently that is a violation as I discovered when one of my four lids on my dumpster was up when the inspector came. Also, surely, that was far too much meat to all have been unfit to serve. I think it is obvious that he planned to bring it back in. The mind just boggles though how he could possibly have thought it was ok to leave it outside and uncovered at that. It defies logic.

In some large, corporate chains (and I have no idea if this is true of Golden Coral but it wouldn't surprise me) much, if not all, of the managers bonus is directly linked to their P&L figures. That would mean throwing away that much product would pretty well kill that managers bonus.

Properly Rotating the stock in a large restaurant walk in is back breaking work. It's soooo much easier to just "fill in the holes" and let the next guy worry about out if date stock.

On another front- I'm in San Francisco now on business. Headline investigative report on last night's news was that Sysco was using unrefrigerated "drop spots"- ie public storage units- in the Bay Area to store meats and dairy for 3-4 hours before they were pickedup and delivered to restaurants. What??? Who would actually think that was okay?
