I LOVE Proof. The baked octopus is a gift from the heavens. My husband and I went for dinner a few weeks ago and I had caramel/sea salt gelato for dessert and it was equally splendid.

Proof is excellent. It's always good to have a restaurant open that pushes the envelope a little bit. By serving octopus and other more esoteric dishes, it just makes our dining scene even stronger.

I wish they would make an olive oil gelato with that sea salt . . .
