Selena's at Willow Lake has a darn good shrimp Po' Boy. They have pretty much darn good everything!
I'm looking forward to taking my Mother-in-law there on Sunday for Mother's Day brunch. We enjoyed it so much last year that we are gong back again this year :D

Second Dan's recommendation on Selena's! My favorite there is the fried oyster po' boy.

Doc Crow's also has a good fried oyster one.

Not directly responsive, but Lotsa Pasta's muffuletta does a decent job of filling the place of Central Grocery's version. (Yes, I know, a poboy is not a muffuletta, but it's iconin New Orleans street food. :) )

Yeah, I've enjoyed the po' boys at Doc Crows - oyster, shrimp, or combo. Good bread.

When they first opened, they were bringing up authentic poboy loaves from N'Awlins. I don't know, but assume they still are.

It's not in the Louisville area, and barely in the Lexington area, but it should be noted that Windy Corner has amazing Po Boys.

Thanks Adriel. I didn't know that they existed. Your post inspired me to do a search and after reading that they're a sister restaurant to Holly Hill, I now am convinced that I should make the drive soon.

The Oyster Po Boys at Doc Crow's are good, but a bit stingy with the oysters. I got one on a trip with my husband, and enjoyed it, but definitely felt it could have used a couple more oysters, and the next time I was there, my mother ordered one and hers seemed to be even lighter on the oysters.

Silver Dollar has a great oyster po'boy on their brunch menu (I haven't been for dinner in a while so I don't know for sure if it's there too) and it is definitely not skimpy on the oysters. I usually have to eat a few to lighten the filling enough to get a bite out of the sandwich. Good stuff.

Another vote for Doc Crow's and one for Joe's OK Bayou.

 ....I was really hoping no one would mention my little under the Hotbytes radar spot...Alas (IMHO) Joe's OK Bayou -does- have the best Po-Boys in town....Fact of the matter is they have some of the best (and most affordable) Cajun fare in town.

Last night had a shrimp/oyster combo, and there were so many they were falling out; next time I'd recommend you try that one.
