This looks very interesting ... a fancy, upscale gourmet-style BUStaurant in a renovated bus seating 12, with alfresco "bistro seating" around it when it parks.

They're starting a Kickstarter campaign soon:

I particularly like their "Buy a Meal, Give a Meal" commitment: "For every meal our customer purchases, we at ROLLING GOURMET will provide a meal to someone who is directly suffering from hunger in the Commonwealth of Kentucky. We will do this by partnering with local and reputable hunger based charitable organization that deals with hunger right here in Louisville."

Interesting. Back where I grew up in Pensacola, a famous restaurant there called McGuire's Irish Pub has a double-decker bus that they often drive to various food and other festivals to serve out of. It was always pretty cool to sit on the top of the bus while eating a delicious cheeseburger!

Hopefully these people are successful!

There is a guy in Lafayette IN who has converted a school bus into a traveling "restaurant." He does breakfast at job sites, and can seat about 12. Interesting idea.

IMO a successful food truck concept would be any that can keep service times FAST and still maintain quality. Something like an Indian truck (or a Cajun truck, Ronnie!) would be ideal because you could keep big pots of curry/gumbo warm on the truck and just have to plate it.

I love what the burger, taco, bbq, and sandwich trucks we have are putting out, but on a nice day at the Flea Off Market or Food Truck Tuesday, when there's a hundred people trying to order from four or five trucks, the wait times get pretty long. I have waited 15-45 minutes for a burger or a grilled cheese from the trucks, but I'm increasingly disinclined to do so.

We've looked into the food truck idea in the dark times when things we far less food truck friendly around town. Needless to say we were in over our heads. Might be time to look again now that things are getting brighter!
