So I went to KT's the other night after having not been in some months, and they had an... interesting special called the Samoa Salmon somethingoranother. I was confused by this, and the wife joked that it was either breaded in Samoa the country or Samoa the cookies, which I thought sounded terrible at first. But then I considered it more... a little dusting of brown sugar, some red pepper flakes to offset the chocolate... could be good.
Well, it turns out it WAS the Girl Scout cookie and I DID end up getting it. Much to my surprise, it was awesome. Nice cut of fish, the cookie made a nice crunchy layer on top of the salmon, and coconut and seafood is a classic combination. It worked out better than I expected, and probably better than it had any right to. So kudos to KT's for thinking outside of the (cookie) box.
