Against The Grain Brewery & To ØL Brewers from Copenhagen, Denmark will collaborate on a beer and will cause a general ruckus here at Against The Grain at the end of January (28-30). The beer, which will remain a mystery for now, will be brewed at Against The Grain Brewery located on the corner of Jackson & Main at Louisville Slugger Field.
To ØL, similar to AtG, are a product of dissatisfaction with beer status quo in Denmark. Tore Gynther and Tobias Emil Jensen (To ØL Brewers) both hail from the same school in Copenhagen, Denmark and , consequently, are former students of the famed ‘gypsy brewer’ Mikkel Borg Bjergsø (Mikkeller). As they were disenchanted with beers available in Denmark, they began the hunt for quality and potent beers. So, was born, the concept of never making compromises with quality in beer.
Tobias and Tore brewed small batches of beer until 2010, when they founded To Øl (Danish for Two Beers) and were poised to produce their first commercial brew. Word spread fast, and as Mikkel heard his former student’s plan, he insisted on making a collaborative brew between Mikkeller and
To Øl, which became the first beer to release from To Øl – Overall IIPA. Since then, To Øl has continued to brew beers that push the boundaries of beer flavor. The approach is to always use the best raw materials, never make compromises with taste, not be concerned with fashion or certain styles, and always have an open mind when brewing.
Against The Grain, much like To ØL, was established to address the beer situation here in Louisville, KY. For too long beer lovers were forced to buy beers that travelled great distances in order to get interesting brews. With that in mind, AtG launched in 2011 with the intent to brew the most interesting, innovative, and highest quality beers, with no boundaries.
To celebrate the visit of our esteemed friends, we will be serving 3 of the To ØL beers on our guest taps.
Additional, to coincide with the visit of these gents, we will be hosting some events that will definitely be worthy of your attention, including a swanky 5 course beer dinner (on Jan 29) and some hell raising. Stay tuned.....
A Swanky 5 course Prix Fixe dinner!
AtG's Brewmaster Jerry & To ØL Brewmasters (Tobias & Tore, pictured above) will pair beers, with commentary from the Brewmasters, for each course.
Guests will be seated for dinner on January 29th at 6:45pm sharp. The dinner will include, an apertif cocktail (to be served casually from 6pm to 6:30pm), 5 courses with 5 beer pairings from both AtG and To ØL Brewmasters, as well as commentary from each Brewmaster regarding the paired choice. The menu is as follows, with no substitutions or compromise.
Basil corn chowder with house cured bacon, chili oil, and pork cracklin’ crumble
Beer poached duck sausage with roasted beets, farro, goat cheese and toasted pecan
Steak tartare with quail egg, sprouts, fried caper, and pecorino romano
Cherry smoked rack of lamb with parsnip purée, pickled garlic, and fried leek
Chipotle pot de crème with bourbon cream and smoked cherries

Guests are encouraged to come casually dressed and prepared to have an evening of amazing beer, food, fun, and company from the makers. Seats are limited to 24 guests. Cost is $75 per guest and reservations must be paid in advance, as there are limited seats available.
