Proof under Wallace? Still good?

We were always big fans of Proof under Michael Paley, but we haven't been there since Wallace took over. I've noticed that the menu still looks like the same kind of stuff that Paley created--this makes me wonder if they are allowing Wallace to fully express himself.

So, has anyone visited lately? Is the food worse, better, or the same? I felt that the quality of ingredients and presentations were always very high at Proof, even when I didn't care for the recipes... is the quality control still high?

The wife and I went a a month or two ago for dinner, after Chef Wallace took over, and both agreed that it was better. It was definitely our best experience at Proof, from the service, to the food, to the drinks.

The menu was somewhat similar, but had some nice changes, and the daily specials are really where Wallace shines. Our waiter did a great job of explaining why each special really was special (or not) - "Chef came across X ingredient and is doing killer things with it;" or "Chef really thought this would turn out, and while it's good, he's not as happy with it as he hoped. You might like this better."

Definitely give it a go.

That's a nice report. Did his specials have any sort of identifiable style? American? French? Southern?

The fingerlings with bone marrow is the best potato dish I have ever eaten.

Just want to chime in... I love Proof... I loved it under M. Paley. But the arrival of L. Wallace, has brightened things up there! Agreed on the 'special' thing... Having the pleasure to get to know him and seeing the passion he has for food translate to the plate is awesome. Louisville is yet again blessed with a rising star...Keep an eye for this guy, he is driven, talented, and a damn good dude! I imagine the world is his fried oyster!
