Oh, yes, Robert, I now go to Captain D's instead--they have some great choices, especially non-fried foods!

a friend of mine in culinary school once told me about his first job at Arby's...
i'm not sure if he was blowing smoke up my ass, or serious...
but he said the beef came liquid in plastic bags, which were then boiled...
then put on a slicer.

alas, i can't back this up with cold hard evidence.

it did seem a bit too far fetched and elaborate to be made-up though.

I put vegetables in your desserts, white chocolate with your fish and other nonsense stuff that you think shouldn't make sense, but coax the nonsense into something that makes complete sense in your mouth. Just open your mind, mouth and eat.

Whatchu mean, Ethan? They were just incredibly ahead of their time in being the first fast food purveyor to cook sous vide. :)

I voted for KFC. I hadn't eaten there for years when I moved here three years ago but went with my nephew for a lunch one day and was very disappointed. I remember that the chicken used to have some taste and texture. I couldn't discern any chichen taste at all and nothing but the crunch of greasy batter. And the biscuits tasted of rancid oil. Combine that and the monstrocity of their meal in a bowl which makes me gag every time I see a commercial and IMO they win hands down.

hey; i didn't knock it!

technically though:

sous-vide involves slow poaching in vacuum sealed bags over a elongated period of time, well below the boiling point.

...but i know what you're getting at. and it's pretty funny in contrast.

Robert, I have to agree with you...I'm also a big fan of the Captain

Everything is prepared fresh when you order and I like the batter dipped fish a little better than most local fish houses cracker-meal breading. They have great sweet tea and their slaw is very good and fries are always crispy. Plus they do it pretty cheap, but they are nowhere near as good as my all time favorite Clarksville Seafood.

On the other hand, Long John's fish "fillets' are suspiciously uniform because the use a glucose binder(food glue) to piece their fish together out of smaller chunks. It is usally very greasy and the sides are luckluster at best. Particualrly the corn coblets that suffer from sitting way too long.

Agreed. They win (lose?) on the sullen service issue, too, at least at the Third Street location. I went to a Louisville Chamber (GLI) meeting a few years ago and heard David Novak (YUM! CEO) speak about YUM!'s intense employee training program to develop cheerful, helpful, friendly staff. A few days later I went to the KFC in question and, upon encountering the counter staff, said to myself "David's message hasn't trickled down". In fairness, I'm not a big fan of fried chicken.

Second place vote goes to Taco Bell.

Add Dairy Queen to the list. I don't go to most of those places regularly, but I have to fulfill my Blizzard craving every now and again. However, the rest of the food is terrible (bland everything, microwaved burgers, etc), the service is ineffiecient, rude and sloppy. I went the other day, waited almost 10 minutes for 2 burgers and a blizzard and then the food was delivered to the window, with ice cream melting off of the cashier's fingers. YUMMY :(

Captain D's fish comes in large frozen fish fillets and cut in house. Actually supposed to be over a light so that any parasites or imperfections can be cut out. Much the same as Moby Dick. During heavy service, not quite cooked to order, but not so much so that it sits around. At other times, cooked when ordered.

And before anybody gags about the parasites, they are killed by the flash freezing. They look sort of like little packets of eggs, but seem to have no taste and are harmless. The only way you might notice them is if you bite them, they will be somewhat hard. Most fishmongers cut them out.

Long John Silvers fish comes to the stores in pressed prescored sheets. No cutting required, just break off the portions, breaded and fried. Who knows what it is, but it tastes pretty good.

Where did you get this info from.....I know the manager at the one in Middletown and I will ask him this on my next visit. I am sure that OTHER places use only fesh fish right out of the water just an hour ago...Right   But that is your opinion and I will ask him the next time I go....I have become ill at a few local fish places in the past....never at Captian D,s....Guess I have a good bug killer in my body.... :D :D

The dirty, nasty places are my favorite. I love Dairy Queen for chili dogs and onion rings and I love the burgers at Hardees.

I hate McDonalds.

I wish we could vote for two places since I can't stand Papa John's Pizza and White Castle!

Papa John's Pizza just really doesn't even taste like what I call pizza. It's too sweet and has little or no flavor. The crust is also kind of funky (I can't think of any other way to describe it). How they ever became as big as they are surprises me.

White Castle has to have the world's worst hamburgers (considerably worse than the burgers at Hardee's) how anybody can eat them, especially in quantity is really a puzzle. The only thing they may be good for its cleaning out your intestines and colon but then we have Super Colon Cleanse for that!

After those two Long John Silver's and KFC come in third and fourth. I know a lot of people think Hardee's is bad but at least their breakfast items are pretty good.

I have been in all of the kitchens mentioned and have seen them operate. There is no reason to have gotten sick from anything that they do and I certainly did not indicate that.

There is absolutely nothing wrong with the hygenic (sp) practices at Moby Dick, Captain D's, or Long John Silvers. I have eaten and will continue to eat at these places. I have never been in one of these kitchens that was not spotlessly clean. When you say you know the "one in Middletown" I have no idea what place you are talking about. The possibility of you getting sick from any of the above places is nil. Try reading my original post again.

Of course they don't use fresh (as in not frozen) fish. Only a few high end places use fresh fish because of financial reasons. The only moderate price place that uses fresh fish that I know of is Stan's in St Matthews.
