Maybe Paul's can help. They have both country ham salad and regular ham salad.

That would be the first place I would look--they have great ham salad and EVEN greater country ham salad so they certainly have the ability to make the "ground ham" that they use in the salads. Also, Butcher's Best in Prospect has ground ham and pork for me before.
