pinwheels?

by Willie Myers » Wed Nov 28, 2012 11:21 am

((Robin, this post may be in the incorrect section? If so, feel free to move and apologies in advance!))

h'lo all, just back from a wonderful trip to Eire, lots of great food & pints and a chance to admire - - but not sample - - a $5k+ bottle of Irish whiskey. hmmm........
but I digress......

One of the many regrets I've had regarding the demise of Doll's is the loss of their great little in-store deli. And a favorite of ours from that deli, were the "pinwheels" that they made up daily. Actually, I didn't know that those things ("pinwheels") even had a name! I just called them "roll-up" thingies, but I've now been informed that they are, in fact, "pinwheels"
but I digress, again....

Anyway, with Doll's gone, does anyone know of a place in town that does these things? The one's in the groceries' frozen food lockers are crap. I need enough for about 10-15 folks, probably not a large enough group for a caterer to get involved.

So, many thanks in advance for your advise!

I do not know where to buy them but they are pretty easy to make.

TORTILLA PINWHEELS

FILLING:

8 oz. dairy sour cream
8 oz. cream cheese, softened
1 (4 oz.) can diced green chilies, drained
1 (4 oz.) can chopped black olives, drained
1 c. grated Cheddar cheese
1/2 c. chopped green onions
Garlic powder to taste
Seasoned salt to taste

Fresh parsley for garnish
5 (10 inch) flour tortillas
Salsa

Mix all of the filling ingredients together thoroughly. Divide the filling and spread evenly over the tortillas; roll up tortillas. Cover tightly with plastic wrap, twisting ends and refrigerate for several hours. Unwrap; cut into 1/2 to 3/4 inch thick slices. Garnish with parsley. Salsa, for dipping. Yield: 50 pinwheels.

This is fine, Willie. It's about buying food! :)

I don't remember Doll's pinwheels, but I'm on board with Lotsa Pasta's "Hye rollers," which we buy a lot to take to parties and other potluck buffets. Basically large rolls of lavash and fillings, which you cut into rounds and serve. Quality ingredients, although I find that they are often on the salty side.

Many thanks to all!
Will, I've been permanently banned from the kitchen (other than making mint juleps and/or egg-nog)!!
Heather & Robin, I'd completely forgotten Lottsa's rollers - - that's a great option!
Nancy, I'll drop in next week and talk about you all doing these!

again, thanks all for your suggestions;
Nancy, called by The Cheddar Box early this a.m. to talk about the order, but was informed that, as of yesterday, no more orders were being taken. Didn't realize that there was a cut-off. Ah, well...maybe next year.
Robin & Heather, I think the Lottsa Pasta suggestion's a definite winner! Stopped by there late this a.m. and they've holding a bunch of them for me! Many thanks for that.
So, pinwheel problem sorted.....move along, move along...nothin' to see here!
Happy Christmas to ALL!

Willie,

I am not sure what you mean exactly by pinwheels, but, if you are talking about meat with like spinach and cheese in them, and rolled up and then cut in to THICK slices I know.

The Fresh Market on Shelbyville Rd does them but not this time of the year. Flank Steak that is tenderized, stuffed with various items (don't remember all the kinds) rolled, tied and cut ready to cook. If you called in a couple days in advance you could have them made up.

DISCLAIMER... I am working part-time at TFM thru the holidays.

Hey all. Just got back on after a holiday cooking marathon and stumbled on this. I have an interesting tidbit. For a while, I was the app girl at Doll's. I used to make pinwheels, cheese tortes and pâté. I kept relatively detailed notes and I see nothing wrong with sharing at this point. Just let me know.

I made the sausage pinwheels that were meant to be reheated. Easy.

Wow. Loved that job. There was a day I made my weight in chicken salad using 15 gallons of mayo. Fantastic.
