La Coop stopping lunch service

From their FB page:

We want to thank all of our guests for their tremendous support during our lunch hours. Unfortunately, due to the size of our dining room and our labor intensive menu, La Coop will stop serving lunch and become a dinner-only restaurant starting Nov. 20.



Somebody educate me on the economics of restaurant ops: why is being busy a bad thing?

I'm just guessing here, but I wonder if economics require offering lunch for a lower price that can't be sustained with a menu up to La Coop's standards: Hours of work needed to accomplish quality product don't match up to a lunch-time reduced rate price.

I hate to see it, though. Part of the vibe that makes NuLu pop has to do with a busy street scene day and night.

They have a small dinning room. It is hard to get a lot of turns during the short time of lunch service. Add to that not much in the way of liquor sales and you get...lower profits for intensive work.

That's a definite downer. I hope they didn't have to let too many folks go. We were there for dinner Saturday and everything was very well played. And I kept my yap shut as Mitch McConnell entered the building!
Service and food were excellent as always, and a bottle of the Furst Pinot Gris was very reasonably priced.
