A Calamari Question

A few weeks ago, we went to Niagara-on-the-Lake in Ontario to unwind, and along with seeing many plays at the Shaw Festival we went to a variety of restaurants, from casual pizza through Irish pub to four-star deluxe. One appetizer showed up at every single restaurant: calamari.

The big difference is that NONE of the calamari appetizers were fried . . . one was grilled, and the rest sauteed. All were either whole or whole minus tentacles. All were excellent - I mean interesting flavors (from a butter marinade to smoky grill flavors to a balsamic glaze), so tender they would melt in your mouth, and at the same time exceptionally healthy (no breading, no frying, little added salt).

We have tried ordering non-fried calimari here in Louisville for almost 30 years now, and while there are occasional exceptions (sometimes Volare can do it - depends on how crowded they are and whether they have any "non-breaded" available - Mitchell's Seafood does a very bland version if you ask, and that's about it with some rare exceptions).

Is there anywhere in town that has non-fried calamari on a very regular basis?????

I don't remember for certain, Andrew, but I'm thinking that Proof on Main has done a grilled version.

I would have swore that Mojito had a stewed type, not fried in a tomato based sauce, calamari on their menu, but I can't find it. Maybe it was a special.

Yes, La Bodega still has grilled calamari on their menu.

I love me some fried calamari, I'm particularly fond of the version at Equus/Jack's Lounge. Even though I made thousands of orders of the stuff during my tenure there, I never tired of the dish.

However, the only time I've ever made a non fried version in my career was when lived in New England and I made the recipe for "Boston Baked Squid" that was always on the package of the Fisherman's Pride brand that we purchased. It was kinda labor intensive as stuffing slippery squid tubes and tooth-picking them closed was a major pain in the ass. But the end result was delicious!

I'm sure I've had grilled calamari at asian restaurants here in town, but I don't remember which ones at the moment. I much prefer grilled to fried.

Good post. If you have never had calamari and visit Louisville you would leave thinking that fried is the only way to serve it. De La Torres/La Bodega make awesome grilled calamari. I am interested to know where I can find more.. cheers!

Thanks for suggesting De La Torres/La Bodega; we'll try to hit there in the near future!

As far as recipes, while I thank Dan for those, I'm happy with a very simple "remove beak, clean, score, and grill/bake/sautee/whatever! The best we had (and one of the best I've ever had) was at the small pizza place, that did a field green salad with two grilled calamari on top & a light olive oil / balsamic vinegar dressing over it all!

I love the calamari at La Bodega as well, and another favorite for non-fried is one of August Moon's "signature" dishes. I think it is just called Spicy Calamari and has a brief description on the menu. It is an entree and I think you can get it for lunch as well as dinner.

when i go into baxter tomorrow, i will play with sauteeing some calamari... if you are in the hood around one, stop in. you can try some of my attempts, if it doesnt kill you, you can gice me input. olo

This is also where I had the calamari "stew" that I thought I had at Mojito. It was on the happy hour menu for around $4.
