The Goose has landed

by Ken B » Wed Oct 17, 2012 9:30 pm

We got in our first shipment of Smoking Goose meats at the Wine Market tonight - you won't currently find them on shelves anywhere around town and I know I saw them mentioned on another thread here recently. Lots of cured goodies to be had:

Smoked Duck
Mortadella
Delaware Fireball (crepinette pork sausage with chili, espellete & garlic, wrapped in caul fat)
Lamb bacon
Stagberry (elk & pork with blueberries & mead)
Gin & Juice (lamb with juniper & orange peel)

We'll be sampling out some of the lamb bacon tomorrow (Thursday, Oct 18) evening, stop by to check it out. These products really rocked us and they're doing all the stuff you like to hear, local (to Indy) farmers, grass fed, organic, etc. etc. Want to see more info? Check out:

We haven't stopped stocking our favorites either: La Quercia Prosciutto, Volpi wine Salami, Columbus Genoa Salame, and locally made Creminelli salumi. And for those of you going nuts over the new Murray's, we still feel like our small but well curated cheese case stands up, and features some fun newer stuff too, like the excellent Beehive Barely Buzzed Cheddar.

If I were still eating meat I would soooo be there. Those cuts look glorious. Still, maybe good fr a few early Christmas gifts huh?

Are you able to special order their other products? I have my eye on their prosciutto and guanciale.

Very nice!

I've tried their jowl bacon, lamb bacon, truffled bologna, soppressata, and spicy capacolla. It was ALL amazing! I urge everyone to buy up every little bit.

Deb- We have to make a minimum order to cover shipping etc. and make our margin. I will pm you the next time we place an order. I am thinking of bringing on the La Quercia Guanciale too.

To All - we are open to bringing in any of their products, there's lots they're doing that is really cool. If there's something you see on their site, let me know here, or call Michael or Britton - my cheesemongers at the Wine Market 451 7446.

As an unsuspecting innocent dude who just went in to buy a damn bottle of wine and was forced AGAINST MY WILL to smell the lamb bacon cooking, and therefore was given NO CHOICE WHATSOEVER but to buy a half pound of it, I can say without equivocation that that stuff totally rules.

But be careful. Ken and his ilk are sneaky and ruthless.

Love their products.
I will be in at some point to purchase them, as that is a lot closer than Indianapolis, but there's still that dang ol' river in the way.

Ryan,

It's okay- I know you'll figure out a way to get over that big ol scary bridge... If not, I'll just eat it for you and report back.

Funny thing how people from the side don't think that river is such an obstacle would come into your restaurant!

All I can say is "Fantastic!"

Brian & I headed over yesterday to purchase a few. Brian tried the Stagberry last night and declared it "worth killing for".  For tonight's dinner, I made a smoked duck and arugula salad with dried cherries and hazelnuts. http://www.restaurantwidow.com/2005/10/ ... lad_w.html. The smoked duck ( and the salad) were excellent. To top it off, I thinly sliced their Bufalo Mozzarella, put in on thin slices of Blue Dog Levain, drizzled with fine EVOO and sea salt crystals. Yum! Closest thing I've had to good Burrata.

Thanks for turning us on the Smoking Goose, Ken! We'll be back for more!

Stopped in tonight for a baguette and a bottle and ended up with some of the Smoked Duck, Mortadella, and Gin & Juice (lamb with juniper & orange peel) salami.

Combined with some leftover sauteed spinach and mushroom au gratin from Mojito's, some cheeses from the Murray's shop at Kroger's and had a bunch of quick and tasty small plates. Outstanding and distinct flavors from all the Goose products that I am thinking about using in a bourbon tasting soon. We'll be back for more.
