Behind the curtain at Majid's

I stopped in Majid’s on Friday night to have a Stephen Dennison cocktail and he was nowhere to be found. How the hell did he get a Friday night off, I thought. I took about two steps out of the lounge and heard my name being shouted out from my left. I turned and there sat Stephen and Majid, both enjoying a glass of wine (inspiration). After a quick hello, I was turning to leave, did not want to interrupt their conversation, it seemed important. As I was getting ready to leave, Stephen told me to have a seat, so I did.

This is where the fun started. I just sat down with two professional planning a wine dinner. These guys were really going at it. Back and forth with ideas: tartare or carpaccio, soup or salad, roasted or Peking duck, filet or sirloin, sauce or no sauce; you get the idea. I had to hold in laughter with the talk of the Peking duck. The thought of Stephen shoving a bicycle pump in a duck is just funny to me. All this and they haven’t even began selecting which wine would go with each course. A quick stop from Chef and they seemed to finish hashing out the courses.

I’m not a wine guy whatsoever, so when the wine paring talks started, my head began to spin. I wish I could explain in more detail what these two were talking about, but I can’t. I can just say these guys are passionate and know their stuff. They make me want to love wine, go to wine dinners, buy a vineyard. It was a pleasure watching this dinner come together and two guys practicing their craft.

For me, every visit to Majid's has shown their passion for food, wine, spirits and the business in general. I regularly recommend Majid's to anyone looking for a great food experience.

You caught Majid and I in a very special moment- one that is quite indicitive of how we do business...

I was showing him the purchase of a Chianti Classico Riserva that I had scored at a very good value- we'll be offering this thing in the low $30's. Not only a great price, but a tremendous wine. It should be in the low 50's, if that gives you an idea.

We were enjoying the sample bottle- it made us happy and will make our guests happy.

Now Majid and I have a language all our own- a way of hammering out things quickly. It's this funny back-n-forth. A give-n-take, so to speak.

'Eh, not such a fan.'

'What about (x)?'

'Good, but how do we improve?'

'I like that, but...'

So on and so forth. You were there- it took about an hour, and this is what we have, so far:

The Cabernet Cabaret

Beef Tenderloin, Sichuan Pepper Blosson, Quail Egg

Spinach, Warm Agro-Dolce Dressed, Roast Cipollini, (something on top,) Tableside

Confit, Crispy Skin, Accoutrements, Moo Shu Style
Charles Krug

Prime Rib
Dry Aged, Koobideh Spice Rub, Starch and Veg
Silver Oak

Bread Pudding
Medjool Dates, Hickory-Smoked Bacon Lardon, Shitake Mushroom
Umami Sangria

This thing is far from over- there are a lot of layers that go into this kind of event...

(but we'll get there)

Honestly, I want to do a brandade and call the main 'Surf-n-Turf.' He probably won't be a fan of that idea, as he tends not to enjoy 'hidden' dishes.

And I'm all about the culinary tomfoolery, hehe...

I'll still throw it out there and see if his eyes light up.

EDIT: He will enjoy the concept of Butter-Poached Lobster Mashed Potatoes (Truffled?)

It is going to have to revolve around another dinner I am working on with Jo Self. You remember her- she ran BVS and we did all of those underground dinners together.

This one I can only explain in bullet points because, as you will see, it's incredibly complex and I don't want to spoil too many of the surprises. Indeed, I think it's probably the most ambitious meal either of us has undertaken.

- She lives in Lima Peru now and is resurrecting BVS there (just finished an event at the French Consulate, from what I hear.)

- This year marks the 50th Anniversary of Andy Warhol's famous Cambell's Soup Can Piece. So we're going to do a dinner that celebrates Pop Art and Pop Culture.

- Two separate dining events on two separate continents. We're gonna Skype each dinner to the other on big screens, so the folks in Lima can virtually dine with the folks in Kentucky (and vice-versa.)

- Five Courses, each inspired by a famous pop artist. I'll be designing the cocktails for both and each chef will be given three ingredients that they must use. The idea is that no two artists paint the same picture. This also allows for each chef to choose dishes and ingredients that represent thier locallity.

- For instance: Andy Warhol's Piece will be represented by a Bloody Mary Variation served in a Cambell's Soup can. For a slice of Americana, we'll be garnishing with a Grilled Cheese of Gruyere, Proscuitto and quality White Bread. Tomato soup and grilled cheese, get it? The chef in Peru will probably do thier homespun variation on the quesadilla.

- The menus will be pamphlets showing a picture of the artist's work, a quick explanation of thier philosophy and then the cocktail and both chef's dishes. That way people can see what the other half is having.

So, we may just push this one back to get our ducks in a row, I'm not sure. I like to have a three week lead time to let everyone know about the event.

So, there's the position I am in today, but I'll let you guys know as soon as we get this thing hashed out!

Sweet Margie! Sounds like great fun. Betting Brian won't be letting that red headed foodie siren out of his sight though so I'll need someone to show me which spoon to use to stir the Sprite into my wine. Kidding! I know which one. :wink:
