I think this guy has the perfect model. Fresh, Local and really cheap. His food cost must be around 5%.

...or we could believe him that he found it and brought it in to cut-up for home use. While obviously a health code violation, there's alot more space to cut a deer up in a commercial kitchen.

I will say that Health Code education in KY outside the major cities can be very poor/ non-existent. My M-I-L opened a place in Harlan County several years back ( now different owner), with no previous industry experience. We were shocked :shock: at her lack of knowledge or requirements on basic stuff; she never had to take a " Food Safe" type class- it was not not a requirement, or to her knowledge, even an option there.
