For those of you who may have a student at JCPS and were wondering exactly how their meals are planned for and prepared, please read this well written and informative article about some of the challenges we face here in Nutrition Services feeding 80,000 students every school day. It has answers to a lot of the questions I frequently get asked by people I meet when they find out where I work.

This was an interesting read Dan. Having been all too briefly behind the scenes with you a couple of times, I already knew about the commitment of the people involved, but knowing the other data really helps bring things into perspective.

I still shudder when I think of those boxes of "school pizzas" that list a "cheese substitute" on the label. It is refreshing to read about experiments with things like fresh kale!
