Need Help on chesecake Idea.

by Ned Weatherby » Sat Nov 10, 2007 8:46 pm

Okay recently I have been doing seasonal cheesecakes for Norma Jeans and after thanksgiving I am changing from Pumpkin Swirl to either a Bourbon Ball cheesecake or a Cheesecake with gingerbread bottom and Peppermint pieces on top. Which sounds better or both

Both sound great. Suggestion .. serve half a regular slice of each and put both on one plate.

You're the devil!
(But put my vote down for the bourbon ball cheesecake.)
In the spring you could do a mohito cheesecake. Infact you could do an entire line of popular drink based cheesecakes. (Harvy Wallbanger CC with orange and Galliano - Rattlesnake CC with Kahula, Dk cr d' cocoa and Baily's.
And on and on...

I try to keep it entertaining

Yeah I try and come up with interesting ideas. They tell me the ghiradelli brownie bottom one with a layer of peanut butter sells good so that is the mainstay I think. I have batted around ideas such as a creme de menthe one, a double chocolate one. In fact I have to go get ready to make another brownie bottomed/peanut butter, and pumpkin swirl today. I may have to experiment with any extra batter. Waste not want not.

Get one

by Ned Weatherby » Sun Nov 11, 2007 4:07 pm

I will let you all know when it will be out and I really only sell them to Norma Jeans. However if you go out there and decide that you want a full one I encourage you to pm me or email me and I will let you know pricing based on ingredients. I really only do this as a hobby as they are extremely time consuming and not much margin on my style of cheesecake. NJ's is nice enough to allow me use of their kitchen on off times. They should have a fresh pumpkin swirl and peanut butter brownie one on Tuesday.

I think eggnog cheesecake would be fantastic!

Try making french toast with eggnog, if you haven't. It's fantastic!

How about a gingerbread crust with a lemon-curd flavored layer on top?
Or a chocolate crust with chocolate cheesecake and peppermint bark?

I prefer chocolate with peppermint and gingerbread with citrus, but that's a personal preference.

Either way, I vote for bourbon. Candied pecans, or even slightly spicy candied pecans, would be a nice garnish.
