Very cool! The folks involved have the money to pull this off and weather the " there are not enough people living downtown" issues. Personally, I can't wait to see the charcuterie. :D

Anybody know which building this is?

This I like. We need more butchers. I refuse to buy the Wal-mart chemical meat, no matter how many commercials they put out where they fool diners into eating their product.

I am a bargain shopper but Walmart meat is not meat, I buy some meat or fish at Meijer but I have found Boone's in Bardstown that is a true meat shop / deli with great prices worth the 30 minute drive from my house.

Unless we are in a pinch, we get our meat from Kingsley's on Taylorsville Rd. and we ONLY get our seafood from the monger up in St. Matthews.

Wal-China might fool the casual diner at the restaurant, but they can't fool me.

Andrew its fairly easy to get hold of Gill or his staff at the Green Building.

I just hope their prices are reasonable.
We had an issue a year or two back where Kentucky Bison was being sold at the Bardstown Road farmer's market, supposedly straight from the company. Yet they prices they wanted were higher than those of buying the same product from them in ValuMarket.

Sad to hear. I was hoping we would finally have a butcher that actually fabricated cuts from whole local animals and skipped the box meat.
