Checked the specials on the Varanese website this afternoon and there was the first Copper River Salmon that I have seen this year.
Took my neice who is from the Pacific Northwest and her assesment was best Salmon outside of Alaska that she has ever had. Preparation below:
Pan Fried Wild Caught Copper River Salmon Served over Sauted Napa Cabbage with Enoki Mushrooms, Sesame Seeds and Jicama Finished with a Cheriaki Sauce
Don't know how much they have left, but it was outstanding.
