Places open for lunch on Memorial Day?

Trying to help someone who will be passing through our fair city on Monday find a spot that will be open for lunch on Monday - yes, this Monday - Memorial Day.

Looking for somewhere relatively nice to celebrate his girlfriend's birthday. She eats fish but no other meat. Suggestions???

Also check some of the ethnic places. And the hotel restaurants, like Proof. They tend to stay open for their guests.
