FOUR COURSE BEER DINNER
Tuesday, March 27th, four courses paired, and prepared
with New Holland Craft Beers
Louisville, KY – March 16th, 2012 – Until a few years ago, it was accepted wisdom that wine was the beverage that one paired with dinner dishes. The continued rise of Craft Beer is changing that, and Chefs Coby Ming and Patty Knight of Harvest (semi-finalist for James Beard Foundation Best New Restaurant in America) have crafted a locally source menu that certainly rises to the occasion.
On Tuesday, March 27th, Harvest will host a New Holland Beer Dinner, featuring a four-course meal of special dishes designed to pair with specific New Holland beers, and in some cases using beer as an ingredient. Opening course of Beer Cheese Soup with pretzel bruschetta and pickled onion jam is paired with New Holland’s “Saison”, a light styled lager with notes of lemon and pepper. A citrusy “Imperial Hatter”, made with a West Coast hops, offers a pleasant contrast to the spicy North African inspired Chicken Merguez Sausage with mustard glaze, spicy greens and harissa deviled egg. The Short Ribs are paired with, and actually braised in “Poet”, a mellow oatmeal Stout.
Executive Pastry Chef Patty Knight’s desserts - Candied Bacon Praline, Chocolate Ginger Macaroons, Bourbon Truffle, and Dragon’s Milk Truffle - pair particularly well with the “Dragon’s Milk” Bourbon barrel aged stout with its notes of Chocolate and Vanilla.
